Sweet Potato Pie

1 Lb canned sweet potatoes or fresh potatoes.

1/2 cup greek yogurt spread

1/2 cup raw organic sugar or brown sugar splenda

2 scoops of Whey protein or Vegan protein

1/2 cup almond milk

2 eggs

4 tbl gluten-free flour

1/2 tsp nutmeg

1/2 tsp cinnamon

1 tsp vanilla

1 tsp lemon juice

Mix all ingredients in a food processor until creamy. Boil fresh potatoes until softened. Let cool. Pour into pie crust or bake as is for 45-50 minutes. Add nuts, gluten-free whipped topping, coconut or marshmellows on top for decoration.


Diabetic-friendly. Gluten-free. Low-calorie. Low-fat.
